Our wines are made in a completely natural way:
vinification in red of all the grapes,
no fermentation control,
no thermal forcing, no chemical aid (only 5 gr of potassium metabisulphite for each 100 kg of grapes at crushing), no fining, no acidification or de-acidification,
no use of enzymes, selected yeasts or anything else.
In the winery our commitment is not to destroy what nature has given us.
Effervescing takes place through natural re-fermentation in the bottle, a method that requires no chemical preservatives; the wine produced this way, unlike charmat wines, improves with age.
All this to us is not just a job, but a way of life, which allows us, thanks be to God, to live in symbiosis with Nature, sharing the wonderful annual cycle of the vine, and relishing the changing of seasons.
